Even though I’m doing something fun, if I spend a day up there, I feel like my weekend is thus reduced to only one day. It’s like I need two days of mulling around the house and doing my mundane activities to feel relaxed. Pretty dumb, I know. In any case, I was swayed into going to Beaver Creek yesterday knowing full well that because of all the snow the mountains got over the past few days, the traffic and crowds were going to be awful. We left at 6:15 and 15 minutes into our drive the cars started getting backed up. I almost made Joe turn around to bring me back home. But I made it, the day was gorgeous and sunny and warm, and there was tons of really deep, untouched snow. Great, I was glad I bucked up and went. Then I realized my phone was missing and wasn’t in the car when we got back to it and Found My iPhone revealed an unfortunate result…

iphone at Beaver Creek deveining shrimp My friend Chris was still up at the resort, about to leave, when I discovered this and he quickly strapped back in, caught the chair with less than one minute left to last call, got 1/3 of the way up the mountain and came to a halt. No more running lifts. He asked around and very nice, no-nonsense ski patrolman Adam offered to snowmobile Chris up to the bottom of the lift where my phone was. But after searching around, they didn’t find anything. I KNEW I SHOULD HAVE STAYED HOME.

I pulled out my old flip phone that I had presciently saved in my desk drawer and prepared to reacquaint myself with T9Word. But then Joe came over, put his phone to my ear and I heard a message from some lady at Beaver Creek saying they’d found my phone. It’s a 1-month-late Christmas miracle!! Technology! Now I can check Facebook while I’m waiting at a red light again! My joy is indescribable!

I’ll be happy to see my little phone again when it arrives in the mail fresh from a night spent in the cold and snow. Almost as happy as I was to eat shrimp scrambled eggs (nope, way more happy, but you’ll be really happy eating these anyway, I promise.)
eggs to be scrambled I wanted to eat shrimp and I really, really love scrambled eggs. Fortunately, it seems I’m not the only one who likes them together. Spaniards do, too! El Arranque Cocina. Sorry. Scrambled eggs are not something you should make when you’re trying to take pictures. I need a photographer. Or a cook. They cook so briefly and need so much stirring. But despite not being exactly perfectly runny, they were still scarfed down with gumption regardless.
shrimp and garlic sauteSo, I thought about whether I’d like small, bite-sized pieces of shrimp, or big, luxurious kind. I went with the latter. You certainly can pick which size you like. Just adjust the cooking time. Shrimp cook very quickly, so don’t overcook them. So do eggs. Bleh. We prepped a whole lot extra because who wants to devein shrimp more than once. Get it all done with at once. Should I eat the vein? Please scale this recipe as needed.

shrimp scrambled eggs

4 eggs
1/4 teaspoon salt
3 tablespoons olive oil, divided
2 garlic cloves, minced
8 16 – 20 count shrimp, or comparable amount of smaller ones

1. In a small bowl, lightly combine the eggs with the salt.

2. Heat 2 tablespoons olive oil in a medium sauté pan over medium high heat. Add garlic and cook, stirring constantly, for 30 seconds.

3. Add shrimp and cook for 2 minutes, stirring constantly.

4. Pour in the eggs and stir, tossing and scraping the pan with the side of your fork to keep from sticking, until softly scrambled.

Serve with the remaining tablespoon of olive oil drizzled on top.
